Watermelon mint salad

   


Ingredients
1 watermelon
lemon juice
honey
mint leaves



Method
  • Scoop out balls of watermelon with the help of a melon scooper or small cookie scooper.
  • You can arrange the balls inside the rind of the water melon for that classy look.
  • Mix the lemon juice , honey and chopped mint leaves.
  • Drizzle this over the melon balls and serve.

Stir Fried Broccoli


  Broccoli,a member of the cruciferous vegetable family is considered to be a powerhouse of nutrients. A vegetable that is low in calories but contains a wealth of nutrients including fiber, vitamin C, vitamin K, iron, and potassium. It also boosts more protein than most other vegetables. Cooking method of this veggie is quite crucial in order to maintain its freshness and nutrient content. Just blanched or steamed broccoli is the best way to have it. To boost the taste we can stir fry it with just a dash of soy sauce and garlic. Adding too many ingredients and cooking broccoli is not advisable as this tastes the best with very limited ingredients. Moreover as the cooking time is very less for this veggie you should be quick so that you don't end up overcooking it.

This recipe was shared by to me by Tasneem and it is so simple, easy and very tasty too. With minimal ingredients you can get your lunch or dinner ready and be satisfied that you had a healthy and hearty meal. Stir fried broccoli with some plain white rice is a pure bliss especially on those days when you want to eat something healthy, light and at the same time easy to make.

 

Ingredients
1 head broccoli cut into florets - approximately 4 cups broccoli florets
4-5 garlic cloves, sliced
1 Tbsp sesame oil
2 tsp soy sauce
1 tsp cornflour diluted in 1 Tbsp water
salt (if required, as soy sauce has high salt content)
Method
  • Boil plenty of water in a saucepan.
  • Add the broccoli to the boiling water. Blanch the broccoli for just a few seconds and as they Turn bright green drain them from the water and keep aside.
  • In a pan heat sesame oil. Add the sliced garlic and saute on high flame for two seconds and Then toss in the broccoli and stir fry on high heat for 1-2 minutes.
  • Add the soy sauce and saute.
  • Pour the cornflour dissloved in water and mix well for a few seconds.
  • Serve hot with steamed white rice.
 


There is no need for adding salt as usually the soy sauce has enough salt. But if you feel you can add salt and pepper as per your taste. I haven't added here any extra seasoning as I prefer it this way.

Spinach Apple Walnut salad | Healthy Salad Recipe | Droolsss






A yummy and healthy salad with the fresh green spinach, goodness of apple, crunchy walnuts all tossed in a quick zingy dressing. Add this to your daily diet or serve it as a salad when you have guests coming home or for a family get together.


   
 Ingredients
2 handful of baby spinach(normal spinach chopped or shredded into bite sized pieces will also do) 
1/2 onion sliced thin
1 apple cored and thinly sliced 
1/2 cup walnuts, halved 
few cubes of feta cheese(optional) 

For the dressing 
1/4 up olive oil 
1 Tbsp mustard sauce 
juice of 1 small lemon 
1 Tbsp honey 
1 garlic clove minced 
salt to taste 
1/4 tsp black pepper powder
Method
  • In a bowl with a lid mix all the ingredients that comes under dressing and shake well.
  • In a big salad bowl add the spinach, onion, apple, walnuts and feta cheese cubes.
  • Pour the prepared dressing on top and toss everything well.

Cucumber Rolls

Trust me, these cucumber rolls are too good to be had on a summer day. The freshness of the cool cucumber with the goodness of the yoghurt makes a perfect appetizer cum salad, that can me made in just a snap.




Ingredients
1 or 2 cucumbers
1tsp very finely chopped onion
1tsp very finely chopped parsley
3Tbsp Greek yoghurt/labneh
1/4 tsp paprika powder + for garnish

Method

  • Using a vegetable peeler, slice thin strips of the cucumber (slice lengthwise each cucumber into thin strips) . Choose equal sized strips to make the rolls and keep them aside.
  • In a bowl, mix all the remaining ingredients into a thick paste.
  •  Spread lengthwise the prepared paste onto each cucumber slice.(You can do this with the help of a spoon and the tip of a knife)
  • Now roll each slice carefully so that the filling is intact in each roll.
  • Arrange the rolls on a serving plate and garnish by sprinkling paprika powder on top.
  • Serve chilled.

Creamy Egg Salad

Ingredients
6 hard boiled eggs
5Tbsp cream cheese
1/4 cup mayonnaise
1/2 tsp sugar
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp salt
1/8 tsp pepper
chopped parsley for garnish

Method
  • In a bowl beat cream cheese until smooth.
  • Add mayonnaise, sugar, onion powder,garlic powder,salt and pepper.
  • Chop the boiled eggs and fold into the prepared cheese and mayo mixture.
  • Cover and refrigerate for one hour.
  •  Sprinkle some chopped parsley before serving .
  • Serve chilled with bread, pita bread, cucumber sticks etc.


*This egg salad can be a good sandwich filling too. Top it with some iceberg lettuce and sandwich between bread slices. A good option to send to school for kids.

Watermelon, feta cheese and olive salad

Ingredients
1 kg ripe watermelon, seeds removed and cut into cubes
50 gms pitted black olives, sliced
250 gms feta cheese, cut into cubes
1 onion sliced thin
2 Tbsp olive oil
1 tsp chopped parsley
1 tsp chopped mint leaves
2 Tbsp lime juice
salt and pepper to taste.

Method
  • Pour the lime juice over the sliced onions, mix and keep aside for 10 minutes.
  • Add the olive oil, salt and pepper to the onion and lime mixture and mix well.
  • In a large salad bowl, add the watermelon chunks, olives and feta cheese.
  • Add the chopped parsley and mint to this.
  • Pour the prepared onion,lime and olive oil dressing on top and mix everything well and serve.

Broken Wheat Salad

A salad that is a meal by itself!!

Ingredients
1/2 cup broken wheat/cracked wheat(soaked in hot water for 20 minutes and drained)
1 medium ripe tomato chopped
1 carrot,chopped
2 cucumber,peeled and chopped
1 teaspoon crushed pepper                                                                         
1/2-3/4 teaspoon lemon juice
1/2 teaspoon chat masala
Salt to taste

Method
  • Combine carrot,cucumber,tomato in a bowl along with broken wheat.
  • Add lemon juice,crushed pepper, salt and give a good stir.
  • Sprinkle chat masala on top and refrigerate for 1 hour.
  • Serve chilled.

Tossed veggies in tangy sauce
Ingredients
6 veg: sausages sliced to 1 inch thickness
1 small onion roughly chopped
1 tablespoon ginger garlic paste
1 teaspoon pepper
¼ teaspoon red chili flakes
6-8 broccoli florets
6-8 button mushrooms
½ carrot thinly sliced
3-4 tablespoon soy sauce
¼ teaspoon maggi seasoning (can skip this step if seasoning is not available)
1 ½ tablespoon oil
Salt to taste
Method
  • Shallow fry sausage in ½ tablespoon oil and keep separate.
  • Heat remaining one tablespoon oil in a pan.
  • Sauté ginger garlic paste for a minute
  • Add onions and continue stirring.
  • Add pepper and chili flakes.
  • Combine all the vegetables along with sausage and stir well.
  • Cover and cook for 3-4 minutes on low flame.
  • Add soy sauce and seasoning and blend properly.
  • Mix well for a minute and turn off the flame.

*Veg.sausage can be substituted with any sausages of your choice.

Broccoli and Onion Salad

Ingredients
1 small broccoli cut into medium sized florets
1 medium onion diced 
juice of 1 lime
1 teaspoon crushed black pepper
1 teaspoon finely chopped garlic
1 teaspoon finely chopped ginger
1 tablespoon olive oil
salt to taste
Method

  • Blanch the broccoli  in salted water. Drain and keep aside.
  • Heat olive oi in a wok. Add the garlic and ginger and saute for 2 seconds.
  • Add in the broccoli and onion and mix well. Season with salt and pepper.
  • Remove from flame and add the lime juice. Toss well and serve.

Green Apple Yoghurt Salad

 Ingredients
1 green apple
1 onion
1 green chili
1 cup yogurt
1 teaspoon fresh cream(optional)
a pinch sugar
salt to taste
a pinch paprika powder
Method

  • Wash and dice the apple into small cubes.
  • Finely chop the onions and green chili.
  • Whisk the yogurt with salt, sugar, green chili and fresh cream.
  • Add the apple and onion to the yogurt and mix well.
  • Garnish with a pinch of paprika powder.
